This is a great soup for the calorie conscious as it has zero fat and loads of flavour.
One quarter bunch of spinach ( about 80-100g )
1 spring onion with tops
1 medium-sized carrot
2-3 medium-sized tomatoes
2-3 cloves of garlic
Salt and pepper to taste
Clean ,wash and coarsely chop the spinach and the spring onions (tops included). Peel, wash and chop the carrot into big pieces. Wash, cut and de-seed the tomatoes. Put all the chopped ingredients and garlic cloves in a pressure cooker. Add about 2 cups of water and cook it for about 20 mins.
Cool and drain the stock. Blend the softened vegetables and pass through a soup strainer. Add the stock and pass the blended pulp through the strainer 2-3 times till you are left with only a small amount of fibrous residue.
Add water, if required, to get the correct soup consistency. Add salt and bring it to a boil. Sprinkle freshly ground pepper just before serving and enjoy the soup hot and piping.
Tip : Do not boil any soup with pepper as this turns the soup bitter. Pepper should be added just before serving to keep its flavour in tact.
