Mojito Melon Salsa

Melons are the perfect fruit for summer with loads of water and fibre. They are refreshing and light. Here is a fruit salsa of musk and watermelons with a hint of mint from the Mojito dressing, an ideal snack for the sweltering hot afternoons.

Serves 2                                   Prep Time 15 mins                                     

Ingredients

  • Musk melon (diced) – 1/2 cup
  • Watermelon (diced) – 1/2 cup
  • Green chilly – 1/2 tsp
  • Coriander – a few sprigs
  • Lemon – 1/2
  • Mojito syrup – 2 tsp
  • Salt – a Pinch

Method 

  1. Wash, peel and dice both musk melon and watermelon and place in a bowl.
  2. De-seed half a green chilly, chop it fine and add it to the melons.
  3. Wash and finely chop coriander leaves and add it to the bowl of melons.
  4. Squeeze juice of half a lemon and add a pinch of salt to the melons and toss.
  5. Transfer the salsa into 2 serving bowls and drizzle one tsp of Mojito syrup over each bowl.
  6. Serve chilled.
Tip: Keep the melons in the fridge so that they are chilled. You can also dice them and keep in an airtight container in the fridge so that they stay crisp.
