Melons are the perfect fruit for summer with loads of water and fibre. They are refreshing and light. Here is a fruit salsa of musk and watermelons with a hint of mint from the Mojito dressing, an ideal snack for the sweltering hot afternoons.
Serves 2 Prep Time 15 mins
- Musk melon (diced) – 1/2 cup
- Watermelon (diced) – 1/2 cup
- Green chilly – 1/2 tsp
- Coriander – a few sprigs
- Lemon – 1/2
- Mojito syrup – 2 tsp
- Salt – a Pinch
Wash, peel and dice both musk melon and watermelon and place in a bowl.
De-seed half a green chilly, chop it fine and add it to the melons.
Wash and finely chop coriander leaves and add it to the bowl of melons.
Squeeze juice of half a lemon and add a pinch of salt to the melons and toss.
Transfer the salsa into 2 serving bowls and drizzle one tsp of Mojito syrup over each bowl.
